Glass jars are undoubtedly the best way to preserve canned foods in the home. I would never use metal containers because of the requirements and costs associated with sealing material when using metal cans.
However, if you plan to make jams, jellies or embroidered items, it is necessary to clean jars during the preservation. This procedure is simple and can be easily done by placing empty containers in the pot. Fill the containers with hot water but without boiling above the mouth of the jar. It should be boiled for ten minutes at an altitude of less than 1,000 feet and added one more minute for every 1,000 feet altitude.
A jar requires a good lid and a good seal. In food processing, the seal on the lid seals the surface of the jar but leaves enough room to allow air to escape from the jar.
Now that the jars are full, release the air bubbles using a flat plastic spatula without metal, please insert them between the food and the edge of the container. Slowly move the bowl over the circle, push the blade up and down to stimulate clearance and escape the air bubble. You must clean the edge of the jar by removing any particles preventing the seal.
