Tomatoes are an incredibly versatile food ingredient that can be eaten raw, cooked or prepared in broths and sauces. They can be filled with meat, rice or breadcrumbs and can be used as the main ingredient in pies. Combined with the bow and some spices, they are also refreshing samba for curry and other oriental dishes.
So, why when people talk about tomato soup, in most cases, they refer to the type of tomato cream that is usually sold in a can?
If you are successfully growing tomatoes in a vegetarian garden, here are some different ideas for making fresh soups, including a very special version of a favorite tomato cream soup.
A ripe tomato soup
It's a quick and easy recipe that should not last more than half an hour for preparation and cooking.
Cook a kilo of good mature tomatoes (roughly chopped) with a chopped onion in about 30 g butter until tender. Pass through a colander in a clean pan and add 1 liter of boiling water. For freshly ground and slightly diluted black pepper (preferably fresh); add three tablespoons whole grain rice, and boil for 20 minutes.
Italian tomatoes
It's a quick and easy recipe that retains the tasty flavor of fresh tomatoes. It is hot, but you can also serve fresh and freshly made Italian bread.
Remove and sieve 750 g tomatoes and brown them in about six tablespoons of oil. Add a clove of garlic and a spoon of chopped fresh herbs (an ideal combination of fresh parsley, basil, and oregano or oregano) cook for about five minutes, then add 500 ml ground soup or chicken soup, salt, pepper and sugar to taste. Cook for another five minutes and serve immediately.
